Moroccan Harira Gorgeously Gluten Free Soup!

Richly spiced and filled with texture, flavour and colour, this fragrant gluten free soup is perfect for brightening up long nights, and makes a nutritious and quick lunch too. This recipe is entirely vegetarian, but for a more filling and protein-packed meal, add cubes of beef or chicken breast pieces. Gluten is common in most cans/packets of soup you might buy from a supermarket, by making home made batches you can ensure all ingredients are natural, nutritious and free from wheat.

  1. 4 tablespoons olive oil
  2. 1 large onion, finely chopped
  3. 1 tin chickpeas (drained)
  4. 2 large peppers, cubed
  5. 4 sticks celery, cubed
  6. 1 medium sized sweet potato, peeled and cubed
  7. 1 large carrot, peeled and cubed
  8. 1 tin chopped tomatoes
  9. 4 cups vegetable stock
  10. ¼ teaspoon saffron
  11. ½ teaspoon coriander seeds
  12. 1 teaspoon cumin seeds
  13. 1 teaspoon ground cinnamon
  14. 2 teaspoon dried chilli flakes
  15. juice of 1 lemon
  16. salt and pepper to taste
  17. 1 bunch fresh coriander
  1. In a large, heavy bottomed pot, heat the olive oil.
  2. Add chopped onions and dry herbs. Cook for 5 minutes on a medium heat until softened and translucent.*
  3. Add chopped vegetables and chick peas and stir through until coated.
  4. Add chopped tomatoes and allow to simmer for 15-20 minutes.
  5. Add vegetable stock and lemon juice. Simmer for 30 minutes and season.**
  6. Garnish with finely chopped coriander before serving
  1. *If including meat, add it at this stage.
  2. **If including meat, increase time to 60 minutes.
