Paleo Breakfast Pancakes – Are You Serious?

Think pancakes are off the menu for a Paleo breakfast?

Think again! Almond pancakes with toasted strawberries are a simple and easy way to bring pancakes to the breakfast table!

You could easily switch this up to create lots of variety to your Paleo breakfast: change the strawberries to raspberries, change the almonds to pecans for example or even make these with coconut flour and bananas.

Using this method as a delicious paleo friendly base you can make a wide variety of pancakes – and NEVER get bored!

  1. 1 cup of Almond flour - a perfect paleo friendly ingredient
  2. 1 Free Range Egg
  3. 150 ml of Almond milk
  4. Washed Strawberries
  5. Washed Blueberries
  6. 1 Banana
  7. Almond flakes
  1. Heat a pan and toast the flaked almonds, add strawberries and heat slightly. You will need nothing in the pan as the strawberries should be slightly wet from being washed.
  2. Ensure they do not burn but just toast to bring out the flavour, paleo breakfasts aren't just about nutrition!
  3. Take off the heat and Set aside in a bowl.
  4. In a large bowl, or a large jug whisk together the egg, almond milk and flour until a smooth batter forms. If you feel the mixture is too runny add a an extra spoon of almond flour.
  5. Heat the pan on a high heat, add a dribble of oil just to ensure the pancake batter doesn't stick!
  6. Add some of the mixture and gently move around the pan.
  7. After just a few moments, flip and cook the other side.
  8. Repeat this step and create a stack of paleo breakfast pancakes.
  9. Throw the strawberry and almond flakes mixture on top and tuck in!
Its Time to Burn
You could even add spinach and make a savoury version, with added iron and texture, plus it’s very colourful. Sneaking in lots of iron it’s a perfect paleo breakfast pancake for children.

  1. So I tried the recipe this morning but it definitely didn’t turn out to be pancakes, more like scrambled eggs… I followed the recipe and I had the pan on a high heat. I even made the mixture again but with no results… I used my home-made almond milk, so maybe something went wrong there? And I can’t find out where to use the banana in the recipe… So my breakfast this morning were some scrambled eggs with some nice fruits 🙂

      1. I tried it once with my homemade almond flour, and tried it a second time with almond flour from the shop, I followed the recipe but I can try it again with more flour, it did look like a pancake mixture… I will keep on trying! 🙂

  2. I will also try grinding the almonds as fine as possible, maybe it will also mix better when the flour is as fine as possible. Tomorrow hopefully pancakes for breakfast 😀
